Hirtzler (c.1875-1931) was a Strasbourg-born chef who headed San Francisco's famed St. Francis Hotel restaurant from its opening in 1904 until 1926. Considered one of America's first celebrity chefs, he invented dishes and gave them memorable names, wrote cookbooks, and hosted extravagant meals.
